Banana Bread.

This time of year fruit or veggies left out on the counter can spoil so fast. I love bananas and try to eat at least one a day for the potassium and other nutrients, but more often than not, after a few days they start to look like this.

So. Gross. Sithboy picked it up by the stem and one of them fell right off. Talk about over ripe, but instead of throwing it out, I made banana bread. It’s quick and easy and the best thing, no freaking preservatives!

This recipe is so good, trust me, it won’t be around long enough to go bad.

  1. I keep bananas around all the time, so they DO go overripe. I put them in our waffles. Also, if they get too ripe and you can’t use them right away, just throw ’em in the freezer. They’ll keep forever and when you let them thaw, they are perfect for baking or smoothies.
